Eid ul Adha is a festival of happiness

finally decided that what would not be out of place in Pakistan is Seekh Kebab,
everybody’s favorite!
Seekh kebabs are juicy mince
preparations put on skewers and soaked with excellent spices that bring a
unique taste on the tongue with each and every bit. This dish can be taken as
appetizers, side dishes and sometimes even as entrees. They have that smoky
flavor and succulent feel that is desirable for any Eid ul Adha celebrations.

Ingredients:
- ½ kg ground mutton or beef, fresh or frozen, which should contain good fat if the burgers are to be juicy.
- 1 big onion , chopped.
- 1 tbsp ginger-garlic paste
- zest and juice of 1 lime and 1 tsp red chili powder (depending upon the tolerance level)
- 1 tsp coriander powder
- ½ tsp cumin powder
- ½ tsp turmeric powder
- 1 tea spoon garam masala powder
- 1 tsp ripen chopped green chilies (optional).
- Salt to taste
- Fresh coriander leaves, chopped (to be used at the end for garnishing the dish)
- Chopsticks (that have been dipped in water to avoid burning)
Instructions:
Spice Up the Meat:
Mix ground meat
with onion, ginger-garlic paste, red chilly powder, coriander powder, cumin
powder, turmeric powder, garam masala powder, green chilly (if using) and salt
in a large bowl. Stir from time to time to make sure the spices have spread all
over the meat.
The Power of Marinating:
Refrigerate
the meat mixture for about 2 hours or preferred over night a top the bowl. This
makes the absorption complete preparing the meat for that burst of flavors it
deserves.
Skewer Power:
After marinating prepare
the portions of the meat mixture and then shape the portions around the skewers.
It is recommended that meat should be long cylindrical and closely stuck to the
skewer.

place them very gently on the grill. Fry for 5-7 minutes on each side,

Tips:
To enrich the taste, a beaten entity
of an egg or a spoon of yogurt could be included to the marinade containing the
meat.
Some people also add a pinch of
caraway seeds or shah jeera for an added unusual taste.
If you do not have a grill then it is
possible to have the kebabs pan fried in a shallow pan together with some oil.
