
A Spicy Eid Adventure: Helping those interested in cooking to discover Real Tasty Beef Bihari Boti
Eid ul Adha like every other festival in Pakistan is a round of rites, rituals, prayers, and above all a mouth-watering spread. Amongst the stars of the table, one dish stands out for its unique blend of flavors and fiery personality: Beef Bihari Boti is a special type of Boti which mainly includes the Beef stuffing and made in Bihari Style.
This dish also originates from the Bihar region; the beef is soft and spicy for which the pieces are marinated and then either barbecued or stir fried. Just the smell is enough to give one a feeling of being starved and once one takes a bite out of it the feeling is even more enhanced due to the delicious combination of its spiciness.
The Essence of Bihari Boti:
In Bihari Boti the star is the marinade really. The meat is usually marinated for 24 hours in an orchestra of spices which include; yogurt, ginger, garlic, red chili powder and a pinch of Kasuri Methi/Bhari Methi. This, not only, marinating the beef with loads of flavor but also, make it very tender at the same time.
Crafting Your Own Bihari Boti Adventure:
Ready to embark on a flavor journey with this Eid special? Here’s a guide to creating your own Beef Bihari Boti:
Ingredients:
• ½ kg (1 lb) beef (preferably flank steak or another tender cut) cut into bite-sized pieces
• 1 cup yogurt
• 1 tbsp ginger-garlic paste
• 1 tsp red chili powder (adjust to your spice preference)
• 1 tsp coriander powder
• ½ tsp cumin powder
• ½ tsp turmeric powder
• ½ tsp garam masala powder
• 1 tsp fenugreek leaves (optional)
• 1 tsp lemon juice
• Salt to taste
• 1 large onion, thinly sliced
• 1 tomato, chopped (optional)
• Cooking oil
1. The Flavor Bath: yar par boora paste, red chili powder, coriander powder, cumin powder, turmeric powder, garam masala powder, methi (fenugreek leaves if using), nimboo ka ran (lemon juice), and namak. Stir properly in order to get a smooth paste like marinade.
2. Marination is Key: To the marinade, add the beef pieces and mix them so that each piece gets coated properly. Place the lid on the bowl, and allow the pot to marinate for at least 4 hours at the refrigerator, preferably overnight to help the soaked flavors to infuse into the meat.
3. Searing in the Goodness: Heat oil in a pan or griddle until the oil is hot on medium-high heat. Lastly, pour the hot oil into the pan and fry the beef pieces, which were marinated in the sauce, for 4-5 minutes, stirring from time to time, so that they get crispy on the outside.
4. The Charred Symphony: Sliced onions and chopped tomatoes: place these in the pan and fry them with the beef for 3-5 minutes until the onions/tomatoes are semi-caramelized. This enriches other layers of taste and a rough feel to it.
5. Flavorful Finish: Lower the heat and place the lid on the pan, allow the beef cook a little longer; total, 5-7 minutes until well done and tender.
Tips:
• Alternatively, you can fry in the grill instead of pan-frying to get a smoky taste and that which is traditional to the Bihari Boti.
• To make you get a thicker gravy, you could add a tbsp of tomato paste or some water when you are stewing the beef.
• As mentioned, Bihari Boti can be had best with roti or naan but if one wishes, they can go with rice as well.
• Finally to add exquisite note can be served with yogurt accompaniments or with sliced onions and freshly chopped coriander.
